Banana Oatmeal Cream Pies w/ Banana Almond Butter Buttercream

They say a picture is worth a thousand words. With that in mind, I will keep this post short and sweet. Really sweet.

These cookies are simple to make and taste incredible. This may be the best oatmeal cookie I’ve ever made! I found this recipe on Pinterest the other day and began salivating almost instantly. However, I am not a vegan (I love me some organic, grass-fed butter!) and neither am I gluten-free. I adjusted some of the original ingredients to suit my needs, and the cookies (and cream) came out perfectly. (Feel free to use the original recipe if you are vegan or follow a gluten-free diet!) πŸ™‚

Banana Oatmeal Cream Pies w/ Banana Almond Butter Buttercream


For the cookie:

  • 2 overripe organic bananas
  • 2/3 cup coconut oil
  • 1 1/3 cups organic sugar (I used half brown & half coconut)
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 4 cups oats

First mix the wet ingredients with the sugar. It helps if you mash the banana a little before attacking it with the hand (or stand, if you’re lucky!) mixer. Then add the flour, soda, salt, and cinnamon and blend until incorporated. Now you want to gradually add the oats 1 cup at a time. Bake in the oven (preheated to 350) for about 10 minutes, until very lightly brown. (The secret to soft, gooey cookies is to leave them a bit underdone.) While the cookies are cooling, you can make the cream filling!

For the cream filling:

  • 1/2 cup organic, grass-fed butter or vegan butter (softened)
  • 1/2 cup almond butter (or other nut butter)
  • 1 overripe organic banana
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar
  • pinch of salt

Whip the banana, butters, and vanilla like you did for the cookies. Gradually add the powdered sugar and a pinch of salt to finish. Place in the fridge andΒ  wait for the cookies to cool completely. (It’s hard, I KNOW! And I won’t tell if you sneak a couple of warm ones. Just make sure to eat them in pairs… So you can sandwich them up later. πŸ˜‰ )


Now you can assemble your sandwiches by adding a small amount of buttercream onto one cookie and placing another cookie on top. Resist the urge to over-cream these guys.. A little bit goes a long way. Now try not to make yourself sick, because these guys are GOOD! Enjoy!
